Maple Doughnuts w/ Coconut Icing


Ingredients: 1 1/2 cups almond flour 1/2 tsp baking soda 1/4 tsp cinnamon 1/8 tsp ground nutmeg 4 tbsp maple syrup (step 4) 2 tbsp coconut oil, melted 1 tsp lemon juice 2 eggs, separated

Coconut icing 1 can coconut milk, chilled overnight 1 tsp vanilla 2 tbsp maple syrup (step 10)

Method: 1. Preheat oven to 180 degrees. 2. Brush a doughnut pan with coconut oil. 3. To make the doughnuts, combine the almond flour and baking soda in a large bowl with the cinnamon and nutmeg. 4. Whisk the maple syrup, coconut oil, and lemon juice with the egg yolks, adding it to the flour. Mix until just combined. 5. Beat the egg whites until firm peaks form and carefully fold this mixture into the batter 6. Transfer the batter to a piping bag. 7. Pipe batter into the doughnut moulds. Bake for 12-15 minutes. 8. While the doughnuts are baking, remove the coconut milk from the refrigerator without shaking. 9. Open and take the cream out of the top of the can. 10. Put the cream in a bowl with the vanilla and maple syrup. Whisk until it is a thick icing. 11. Cool the doughnuts completely before icing.
