Breakfast Bakes

Note: can be eaten warm or cold.

Ingredients:
85g (1/2 cup) quinoa (uncooked)
85g (1/2 cup) oat flakes
3 big, ripe bananas (cut in slices)
200g (2 cups) blueberries
125g strawberries
1 apple (cut in pieces)
500ml (2 cups) your choice of milk
2 eggs
2 scoops (70g total) Bluebell Vanilla shake
60ml (1/4 cup) agave syrup
150g low-fat curd
1 teaspoon cinnamon powder
Dash lemon juice
Pinch salt
Butter/oil for the baking pan
Method:
1. Preheat oven to 195 degrees celsius.
2. Rinse quinoa and oat flakes well under cold water.
3. Drain and put them to one side.
4. Rinse berries.
5. In a bowl, mix the eggs with your Bluebell vanilla shake powder, milk, cinnamon powder, salt, agave syrup, lemon juice and low-fat curd.
6. Grease baking pan and put in half fruit.
7. Cover with quinoa and oat flakes.
8. Place rest of fruit on top.
9. Pour liquid paste slowly over the rest.
10. Bake in oven for approximately 45 minutes (dependent upon the water content of fruits - check with a toothpick or skewer if the dough is still runny).
11. Take out of oven to cool.
12. Cut into equal pieces.
