Raw Chocolate Peppermint Slice

Note: Soak the pitted dates in warm water for 15 min, then drain.

Ingredients:

Base 1 ½ cups desiccated coconut 9 pitted dates (soaked in warm water for 15 min, then drained)

1 tablespoon of cacao 1 tsp vanilla

Filling 1 ½ cups desiccated coconut Pinch of salt

5 big tablespoons of rice bran syrup 1 teaspoon peppermint (or more depending on taste)

Chocolate 4 tablespoons maple syrup 6 tablespoons cacao

¼ cup coconut oil (melted)

Method:

Base 1. Line square loaf tin with baking.

2. Place the base ingredients into a food processor or blender.

3. Blend on high until mixture resembles crumbs, sticks together.

4. Pour into tin, pressing the mixture firmly to create a flat base.

5. Place in fridge.

Filling 1. Place the filling ingredients into a food processor or blender.

2. Blend on high until it is mixed together and reasonably smooth.

3. Press mixture over the base and return to fridge.

Chocolate 1. Place the chocolate ingredients into a bowl, mixing until it resembles melted chocolate.

2. Pour this mixture over your slice and spread it out evenly.

3. Return to fridge to set.
